Crock Pot for the WIN, again!

It's been a rather COLD week here in the mitten! Seeing as we are still having snow in March, my family needed a nice warm-up for dinner the other night. This crock pot chicken chili was the winner. Let's face it, who doesn't like coming home from work with dinner already cooked and waiting for you, nobody, that's who!! I had this chili at my cousins house for an Origami Owl party and was instantly IN LOVE! Thanks Char, for the good time and amazing recipe! XO

Ingredients:

  • 3 good size chicken breasts-frozen or cubed/chunked
  • 2 cups chicken broth (if you want more soupy consistency, use 3 cups)
  • 1 cup milk
  • 1 packet of taco seasoning
  • 1-2 cups of corn (or 1 can, we use frozen in my home)
  • 2 cans of Great Northern Beans-drained, cause let's face it, that's gross!!
  • 1 can of Ro-Tel with Chiles, or any diced tomatoes with green chiles-you don't have to drain this-we want the tomato juice!


Ok, you ready for the instructions?...Dump everything in crock pot, turn on low for 6-8 hours. BAM! Done. If you don't cut the chicken before starting this, just carefully pull it out and chunk or cube it to your liking and add it back in.



I used 3 good size chicken breasts, that I cut in small chunks before putting in-you can put in frozen breasts and cut them later if you want too.


That's it folks! You can add a dollop of sour cream or use saltines.

Hamburger Helper deprived Child I have..

Hey all! So, my min and I were grocery shopping the other day. She got my attention and asked if we could have something she saw for dinner one night cause she's never had it. When I seen what she was referring to, I kinda laughed..She was asking for Hamburger Helper, because yes, in her 7 and a half years on this earth I have NEVER fed my child this stuff! I explained to her why she has never had it, and why I would not be purchasing this. I told her I would however, find a recipe I could make from scratch so she could have it. So, I went on a mission. She wanted the hamburger helper beef pasta. The recipes I found for that, didn't sound or look that tasty. So, I went with the cheddar recipe. Let me tell you folks, Divas Can Cook had the WINNING recipe! It turned out AMAZING! My mini had herself two very large helpings!

If you want an easy, quick, and not full of MSGs and preservatives, add this to your dinner rotation!

Simple slow cooker beef and gravy

Hello all!!

Thanks for stopping by! I know like myself, most parents are busy. Whether you work at home, or in a office, who has time to prepare a gourmet meal for your family every night?! That's why I am writing this blog! I want to help you feed your family a good home cooked meal! My family and I stopped eating fast food about 3-4 years ago. We still have the occasional Subway, or we will eat at a Coney Island. But fast food, is a big YUCK! My 7 year old is one of a few  who does not beg for McDonald's. Definitely a proud mom!

Ok, on to a good, simple and yummy recipe! Not only is this recipe really really, REALLY yummy, it's a slow cooker recipe! DOUBLE BONUS! This one I found on the amazing Pinterest, it was a definite win in my house! Pocket Change Gourmet had the recipe on her blog. GREAT STUFF! I followed the recipe, but added some fresh mushrooms to it. I also think that next time, I will substitute the cream of celery, and use cream of mushroom (my family LOVES mushrooms).
